Bookkisa Washed 74110 & 74112

First timer in the Roastful box! We discovered Thoughtful earlier this year after they reached out to us about collaborating on a box. We love that it leans towards the ultralight profile, while still developing the roasts enough that they’re not ultra-grainy or ultra-corny. This washed Ethiopian is quite different from the one from Hex in that it’s a bit more delicate, so it compliments it quite well.

Brew notes

General notes on brewing:

Rest time: 2-4 weeks

Temp: 205+ (Boiling temps work well in the earlier age of this roast, as it ages 205 would be the better temp).

Grinding: In comparison with the Hex Ethiopian, grind this one a bit coarser, and use a bit less agitation if possible.

Other notes: These ultra light coffees tend to do better with a bit more time in unopened bags- leaving this one for 2 weeks before opening would be a great idea.

Hex

Tagel Alemayehu

A frequently recurring partner of ours, Hex coffee is, in our opinion, one of the most underrated roasters in all of the US. This washed Ethiopian coffee is a great representation of the coffees that Co-founder Chandler loves- it’s clean and delicate, and the roast profile is a bit more on that light-medium tip that allows for a bit more solubility, and efficient drain times.

Here are some general tips on how we’d recommend brewing this one:

Rest time: 1-2 weeks

Temp: 205

Grinding: You could grind a bit finer than typical Ethiopian coffee with this one having really good solubility.

Rowan

Mohammed Aba Nura

Bow (founder of Rowan) is a great friend of Roastful- one that we get excited to work with every time we feature Rowan. This coffee is from Mohammed Aba Nura- a producer we’ve grown to love over the past several years after having his coffee from multiple roasters. What’s always shocked us is how clean his coffees are- it could fool the most experienced pallets into thinking it’s a washed coffee!

General Notes on brewing:

Rest time: 1-2 weeks

Temp: 200

Grinding: In line with the Hex Ethiopian

Other notes: We like how delicate this coffee tastes at lower temps- but if you want a little bit more of a kick, you can certainly bump temp up to 205.
