H&S might be the most popular roaster amongst home brewers and coffee nerd enthusiasts (we also are “coffee nerd enthusiasts) here in the US- and for good reason. Offering a wide range of sourced processing styles and the “ultralight” roast profile, purchasing a coffee from H&S can be a very different experience each time. This time we’re featuring a washed Colombian Caturra from them that is extremely floral and delicate- in part due to the great production of the green coffee and the other part due to the delicate roast profile.
Let this one rest a minute! It is not very soluble, and in order to not have to grind to crazy coarse it probably needs to sit on your shelf for another week or two. If you have a no-bypass brewer like our favorite COLUM dripper or something like the Pulsar, this might be a great option, as the insolubility may cause water to bypass around the bed as water is looking to drain into your favorite mug (or decanter).
Extremely influential in the Japanese (and broader Southeast Asian coffee scene) is Kurasu- a roaster we were honored to feature on our panel for this year's Top 100 Roaster List. From Kurasu we’re featuring a honey processed Costa Rican coffee that is super apricot-y and sweet with a really well rounded malic acidity.
Slightly longer ratios work pretty well for this coffee- highlighting some pleasant black tea notes as well as nice citric and malic acidity.
A newer roaster in the Canadian coffee scene is Évery- one we’re already in love with! Apart from being a super easy roaster to work with and build a relationship with, they roast coffee that is a bit sweeter and rounder than coffee we typically feature these days- and it’s actually quite refreshing. A great reminder that coffee can taste great amongst many different styles of roasting!
Lower the temp a bit on this one if you’re using boiling water- something around 202-203°F may be a great sweet spot to highlight some of those delicate florals in this really sweet Ethiopian coffee.
