Though Quo may be (relatively) new, they certainly don’t lack experience. Founded by one of the co-founders of Morgon, Quo’s roast profile and green selection is very reminiscent of the coffees we’ve had from Morgon. Ethiopian season is upon us, because this is our second Ethiopian coffee in this month’s box!
Higher in brew temp works well with this coffee. It’s maybe not quite as light as a Sey profile, but pushing towards boiling temps certainly doesn’t bring out much astringency. If you’re getting any astringency, back off temp a bit, but keeping it high should work well for this one.
We love small roasters. Smaller roasters tend to be (not always, but not uncommonly) extremely intentional with their roast profiles and green coffee selections. Anomolous certainly has done this here- and while it’s not hard to select a coffee from the famous Juan Peña, the roast profile is spot on.
Really liked this one around 205. 1:17 ratios work. Our favorite cups came from 12 gram column dripper doses- we really liked how clean the cup was on these brews.
This fresh and vibrant coffee from Modcup is going to light up your taste buds. We’ve been following along with Modcup for a while and we really loved a lot about this coffee. Expect a lot of juicy, round stone fruit notes from this one.
We liked how the acidity popped at slightly lower temps on this one, somewhere around 200 degrees. Pulling ratio back makes this one really nice and juicy too, a ratio of about 1:16.5 turns out really well.
