We love really light, clean roasting, as well as really clean coffees being sourced, and Prestin is definitely focusing on these attributes. The selection this month is definitely representative of those types of coffee- it has a deep, expressive purple fruit quality as well as a really perfumic floral attribute.
This coffee is relatively easy to brew- it’s moderately soluble, so you should be able to adjust your grind settings up or down depending on what flavor profile you’re going for. One thing we noticed is that this coffee definitely has a more clear and defined acidity at temps below boiling- start at 200 degrees and move up to 205 depending on your preference.
Were so stoked to feature Féve for the first time- they’re roasting really sweet and balanced coffee that we’ve been really impressed with. The Pacamara featured this month is a really nice morning cup to compliment the other two coffees!
Very soluble- it’s definitely easy to brew. Stay at boiling and grind maybe a bit coarser while using multiple pulses (with a Melodrip if you have one available)- this will keep that cherry/plum acidity much more clear and defined.
Last but not least, we’ve got Botz in the box this month. We remember when Danny messaged us a few years ago with the message "Hey, I’ve got some coffees I know you’re going to love". We loved the confidence then, and he follows through with a really balanced, light roasting approach. This coffee from Botz just placed 2nd in the Ethiopian Cup of Excellence, it’s a real treat.
This one may be a bit more challenging to brew- it definitely can clog a bit more than the other two being that it’s so dense. Grinding coarser doesn’t always help this, but using less agitation (less pours, softer pours, Melodrip pours), will provide a quicker drawdown time as well as potentially utilizing something like the Sibirast Fast Filters or our personal favorite, the Aji Filter.
