No intro needed for our nerdiest friends. H&S has popped off over the last few years in the home brewer crowds for being a trusted roaster to go to for Ultra-light roast profiles. With all the noise and buzz, however, they’re becoming more of a household name amongst all coffee enthusiasts- finding their way on to the shelves of some legitimate cafes. This Ethiopian coffee from H&S is about as textbook as it gets- for an ultralight it has a ton of structure, yet with all of the lovely clarity and acidity we’d expect from that style of roast.
Here are some general tips on brewing this coffee:
Rest: 2 Weeks minimum
Water temp: 195-200
Grind size- medium
Ratio: 1:17+
Reduce agitation for best results
Maybe a little bit of an intro needed with these guys! Once you taste the coffee however, you won’t forget them. Stepping inside the quaint cafe in Pittsburgh and meeting the owner of Ghost is a wondrous experience for all whom we’ve talked to- friends we’ve recommended to go there and even ourselves! Conversations range from coffee to sports and everything in between- these guys have created a wonderful atmosphere in their shop. We don’t feature just coffee roasters who have good coffee shops though- we really loved getting to taste through more of the portfolio from Ghost. Super sweet roast profile, really well executed. The coffee we’re featuring from them is a Java variety- it’s a bit more unusual to make its way into a box given it being a bit more scarcely found on roasters portfolios. We think you’ll really enjoy the pulpiness and acid that’s found in this coffee!

If H&S needed a little bit of an intro, and Ghost needed a lot, these guys need none. One of the most consistently featured roasters in the Roastful box is Passenger, and they’re considered by many to be a really monumental roaster when it comes to very lightly roasted coffee. We’ve noticed a bit of a trend towards a more developed profile from Passenger- it works well for this particular coffee, a naturally processed kenyan with a loud profile.
