This one is a first for us- a washed SL28 from Panama. Combine this with Mirra’s precise ultra-light profile and you get a crisp, clean, fresh tasting coffee with a vibrant acidity.
This coffee needs some rest! Let it be for a few weeks and work on drinking the other two. It is soluble enough to brew with, but the coffee will open up even more in a few weeks. Boiling temps work fine for this coffee!
One of our favorite roasters from the North East is back in the box this month. Featuring one of Lucas’s (co-founder) favorite Tabis in Colombia, this one will go nice as a sweet morning cup!
We find this one tasting a bit better at lower temps (200 and below). Finer grind settings work pretty well, as well as slightly tighter ratios, emphasizing the juicier qualities this coffee has!
First timer in the box! We’ve come to love the delicate roast profiles from Moonwake- even coffees like this one with a bit more process forward profile tend to taste really balanced due to their delicate and soft light roast profile.
This coffee tastes really nice at 205 and above, and it could use a little rest if you want to focus on the Ilse above, but it’s also pretty tasty now! We really like this one at longer ratios (1:17) but is nice and punchy at your shorter ratios as well.
